[Recipe] Breakfast Bake
I'm sharing another one of my recipes from my pregnancy and postpartum meal plans ebook. Coll thing is, you don't have to be pregnant to love these meal plans! I think anyone could appreciate some quick and easy recipes!

1 pound sausage
2 cups sliced mushrooms
6 green onions, sliced
1 bell pepper, diced
1 tablespoon basil, chopped
16 ounces spinach, chopped
1. Preheat oven to 350 degrees. In a medium skillet over medium heat, brown and crumble sausage.
3. Add mushrooms and cook about 5 minutes or until soft, stirring occasionally. Add remaining vegetables, herbs, and salt and cook about 2 minutes or until slightly softened and well combined. Pour mixture into a 9x13" pan.
3. Crack eggs into a medium bowl and whisk well. Pour over sausage-vegetable mixture and bake 25-30 minutes until fully cooked.
